Cereal-sly Good Cookies Pop-Up

Most of us know and love Christina Tosi! She’s the awesome NYC baker behind Milk Bar who started an enduring trend in the cookie world when she added Cornflakes and Cinnamon Toast Crunch to her cookies. After-School Snack Attack is adding our spin to this cookie trend with two options for this week’s pop-up that incorporate our childhood favorite cereals.

Calvin’s Fave Chocolate Frosted Sugar Bombs

My fam loves Calvin & Hobbes and they challenged me create a cookie based off of Calvin’s favorite breakfast cereal. These cookies incorporate my favorite childhood treat, Cocoa Krispies, into a chocolate-espresso chip cookie with a donut-inspired glaze. The flavors are sophisticated enough for a grown-up palette and silly enough to excite my kiddos.

Golden Graham S’Mores Cookie

In my childhood home, birthdays were all about getting to choose a box of sugary cereal? My go-to most years was golden grahams because they weren’t overly sweet and they stayed crunchy in milk! I decided they’d be the perfect inspiration for my take on the s’mores cookie. These beauties have the perfect balance of sweet, salty, graham and gooey. When you can’t roast marshmallows over a campfire, these snacks are the next best thing.
